Kwacoco Njansa (njangsa Chicken Stew)

Ingredients

  • 1 whole chicken, cut into pieces
  • 1 cup njangsa seeds
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 3 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 cups chicken broth
  • 1/4 cup palm oil
  • 1 scotch bonnet pepper, chopped
  • 1 teaspoon ground crayfish
  • Salt and pepper to taste

Instructions

  1. Grind the njangsa seeds into a fine paste using a mortar and pestle.
  2. In a large pot, heat the palm oil over medium heat and sauté the onions, garlic, and ginger until fragrant.
  3. Add the chicken pieces to the pot and brown on all sides.
  4. Stir in the ground njangsa paste, diced tomatoes, scotch bonnet pepper, and ground crayfish.
  5. Pour in the chicken broth, season with salt and pepper, and bring the stew to a simmer.
  6. Cover the pot and let the stew cook for about 1 hour, or until the chicken is tender and the flavors have melded together.
  7. Adjust the seasoning if needed and serve the Kwacoco Njansa hot with steamed rice or fufu.
