Ingredients
- 1 whole chicken, cut into pieces
- 1 cup njangsa seeds
- 2 onions, chopped
- 3 tomatoes, diced
- 3 garlic cloves, minced
- 1 inch ginger, grated
- 2 cups chicken broth
- 1/4 cup palm oil
- 1 scotch bonnet pepper, chopped
- 1 teaspoon ground crayfish
- Salt and pepper to taste
Instructions
- Grind the njangsa seeds into a fine paste using a mortar and pestle.
- In a large pot, heat the palm oil over medium heat and sauté the onions, garlic, and ginger until fragrant.
- Add the chicken pieces to the pot and brown on all sides.
- Stir in the ground njangsa paste, diced tomatoes, scotch bonnet pepper, and ground crayfish.
- Pour in the chicken broth, season with salt and pepper, and bring the stew to a simmer.
- Cover the pot and let the stew cook for about 1 hour, or until the chicken is tender and the flavors have melded together.
- Adjust the seasoning if needed and serve the Kwacoco Njansa hot with steamed rice or fufu.
