Ingredients
- 2 ripe plantains, peeled and diced
- 1 lb fish fillets, cut into chunks
- 1 onion, chopped
- 2 tomatoes, diced
- 3 cups fish or vegetable broth
- 1 cup coconut milk
- 2 tablespoons red palm oil
- 1 teaspoon ground crayfish
- 1 scotch bonnet pepper, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat the red palm oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the diced tomatoes and cook until softened.
- Stir in the diced plantains, fish fillets, and ground crayfish.
- Pour in the fish or vegetable broth and coconut milk. Season with salt and pepper.
- Add the chopped scotch bonnet pepper for a spicy kick.
- Simmer the porridge for 30-40 minutes, or until the plantains are tender and the fish is cooked through.
- Adjust the seasoning if needed and serve hot.
