Ingredients

  • 2 ripe plantains, peeled and diced
  • 1 lb fish fillets, cut into chunks
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 3 cups fish or vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons red palm oil
  • 1 teaspoon ground crayfish
  • 1 scotch bonnet pepper, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the red palm oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Add the diced tomatoes and cook until softened.
  4. Stir in the diced plantains, fish fillets, and ground crayfish.
  5. Pour in the fish or vegetable broth and coconut milk. Season with salt and pepper.
  6. Add the chopped scotch bonnet pepper for a spicy kick.
  7. Simmer the porridge for 30-40 minutes, or until the plantains are tender and the fish is cooked through.
  8. Adjust the seasoning if needed and serve hot.
