Kyan Hin (spicy Garlic Eggplant Stir Fry)
Kyan Hin is a popular Burmese Chinese dish featuring tender eggplant stir-fried with a spicy garlic sauce. This flavorful and aromatic dish is perfect for a quick and satisfying meal.
Ingredients
- 2 large eggplants, cut into cubes
- 3 tablespoons vegetable oil
- 4 cloves garlic, minced
- 2 red chilies, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1/2 cup fresh basil leaves
- Salt to taste
Instructions
- Heat 2 tablespoons of vegetable oil in a large pan over medium heat.
- Add the eggplant cubes and stir-fry until they are tender and slightly browned. Remove from the pan and set aside.
- Heat the remaining 1 tablespoon of oil in the same pan. Add the minced garlic and sliced red chilies. Stir-fry until fragrant.
- Return the cooked eggplant to the pan. Add soy sauce, oyster sauce, and sugar. Stir-fry for another 2-3 minutes.
- Add fresh basil leaves and stir until wilted. Season with salt to taste.
- Transfer to a serving dish and serve hot with steamed rice.
