Kyan Hin (spicy Garlic Eggplant Stir Fry)

Ingredients

  • 2 large eggplants, cut into cubes
  • 3 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 2 red chilies, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1/2 cup fresh basil leaves
  • Salt to taste

Instructions

  1. Heat 2 tablespoons of vegetable oil in a large pan over medium heat.
  2. Add the eggplant cubes and stir-fry until they are tender and slightly browned. Remove from the pan and set aside.
  3. Heat the remaining 1 tablespoon of oil in the same pan. Add the minced garlic and sliced red chilies. Stir-fry until fragrant.
  4. Return the cooked eggplant to the pan. Add soy sauce, oyster sauce, and sugar. Stir-fry for another 2-3 minutes.
  5. Add fresh basil leaves and stir until wilted. Season with salt to taste.
  6. Transfer to a serving dish and serve hot with steamed rice.
