Kyar Zan Kyaw (crispy Chili Chicken With Cashews)

Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/4 cup vegetable oil
  • 1/2 cup roasted cashews
  • 3-4 green chilies, sliced
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp chili paste
  • 1 tsp sugar
  • 1/2 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. In a bowl, coat the chicken pieces with cornstarch, salt, and pepper.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Fry the chicken until crispy and golden brown. Remove and set aside.
  3. In the same skillet, add the garlic, green chilies, and onion. Stir-fry until fragrant.
  4. Add the red bell pepper and continue to stir-fry for another minute.
  5. In a small bowl, mix together the soy sauce, oyster sauce, chili paste, sugar, and chicken broth. Pour the sauce into the skillet and bring to a simmer.
  6. Return the crispy chicken to the skillet and toss to coat with the sauce.
  7. Add the roasted cashews and stir to combine.
  8. Adjust the seasoning with salt and pepper if needed.
  9. Serve the Kyar Zan Kyaw hot with steamed rice.
