Kyar Zan Kyaw (crispy Chili Chicken With Cashews)
Kyar Zan Kyaw, also known as Crispy Chili Chicken with Cashews, is a popular dish in Burmese Chinese cuisine. This flavorful and spicy dish is a perfect combination of crispy chicken, roasted cashews, and a spicy chili sauce.
Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/2 cup cornstarch
- 1/4 cup vegetable oil
- 1/2 cup roasted cashews
- 3-4 green chilies, sliced
- 3 cloves garlic, minced
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1/4 cup soy sauce
- 2 tbsp oyster sauce
- 1 tbsp chili paste
- 1 tsp sugar
- 1/2 cup chicken broth
- Salt and pepper to taste
Instructions
- In a bowl, coat the chicken pieces with cornstarch, salt, and pepper.
- Heat the vegetable oil in a large skillet over medium-high heat. Fry the chicken until crispy and golden brown. Remove and set aside.
- In the same skillet, add the garlic, green chilies, and onion. Stir-fry until fragrant.
- Add the red bell pepper and continue to stir-fry for another minute.
- In a small bowl, mix together the soy sauce, oyster sauce, chili paste, sugar, and chicken broth. Pour the sauce into the skillet and bring to a simmer.
- Return the crispy chicken to the skillet and toss to coat with the sauce.
- Add the roasted cashews and stir to combine.
- Adjust the seasoning with salt and pepper if needed.
- Serve the Kyar Zan Kyaw hot with steamed rice.
