Kymyz (Fermented Mare's Milk)
Fermented Mare's Milk, also known as Kymyz, is a traditional beverage in Kazakh cuisine. It is a slightly sour and effervescent drink that is believed to have various health benefits.
Ingredients
- 1 liter of fresh mare's milk
- 1 tablespoon of previously fermented Kymyz (optional, for starter culture)
Instructions
- Heat the mare's milk in a pot until it reaches about 37°C (98.6°F).
- If using a starter culture, mix the fermented Kymyz with a small amount of the warm milk to create a slurry.
- Combine the slurry with the rest of the warm milk and mix well.
- Transfer the mixture to a clean, sterilized container and cover it with a clean cloth or paper towel secured with a rubber band.
- Leave the container at room temperature for 24 hours to ferment.
- After 24 hours, the Kymyz should be slightly thickened and effervescent. It is now ready to be refrigerated and served chilled.
