Kymyz (Fermented Mare's Milk)

Ingredients

  • 1 liter of fresh mare's milk
  • 1 tablespoon of previously fermented Kymyz (optional, for starter culture)

Instructions

  1. Heat the mare's milk in a pot until it reaches about 37°C (98.6°F).
  2. If using a starter culture, mix the fermented Kymyz with a small amount of the warm milk to create a slurry.
  3. Combine the slurry with the rest of the warm milk and mix well.
  4. Transfer the mixture to a clean, sterilized container and cover it with a clean cloth or paper towel secured with a rubber band.
  5. Leave the container at room temperature for 24 hours to ferment.
  6. After 24 hours, the Kymyz should be slightly thickened and effervescent. It is now ready to be refrigerated and served chilled.
