La Ji Jiao (spicy Chicken Feet Salad)

Ingredients

  • 500g chicken feet, cleaned and trimmed
  • 2 tbsp Sichuan peppercorns
  • 3 dried red chilies
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 2 tbsp black vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/2 cup chicken broth
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, bring water to a boil. Add the chicken feet and blanch for 5 minutes. Drain and set aside.
  2. In a wok or large skillet, heat the vegetable oil over medium heat. Add the Sichuan peppercorns and dried red chilies, and stir-fry until fragrant.
  3. Add the green onions and garlic, and continue to stir-fry for another minute.
  4. Next, add the blanched chicken feet, soy sauce, black vinegar, sugar, salt, and chicken broth. Bring to a simmer, then reduce the heat to low and let it simmer for 1 hour, or until the chicken feet are tender.
  5. Once the chicken feet are tender, remove from heat and let it cool to room temperature.
  6. Transfer the chicken feet to a serving plate, garnish with additional green onions if desired, and serve as a spicy and flavorful salad.
