Ingredients

  • 500g pork kidneys, sliced
  • 2 tbsp vegetable oil
  • 3-4 cloves garlic, minced
  • 2-3 red chilies, sliced
  • 1 tbsp Shaoxing wine
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 cup chicken stock
  • 1 tsp cornstarch, dissolved in 2 tbsp water
  • 2 green onions, chopped

Instructions

  1. Heat the vegetable oil in a wok over high heat.
  2. Add the garlic and red chilies, stir-fry for 30 seconds.
  3. Add the pork kidneys and Shaoxing wine, stir-fry for 2-3 minutes until the kidneys are cooked through.
  4. Pour in the soy sauce, dark soy sauce, sugar, and salt, stir to combine.
  5. Add the chicken stock and bring to a simmer.
  6. Stir in the cornstarch mixture to thicken the sauce.
  7. Garnish with chopped green onions and serve hot.
