Ingredients

  • 500g pig's kidneys, cleaned and sliced
  • 3 tbsp vegetable oil
  • 2 tbsp Sichuan peppercorns
  • 3-4 dried red chilies, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, julienned
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • Salt to taste

Instructions

  1. Heat a wok over high heat and add the vegetable oil.
  2. Add the Sichuan peppercorns and dried red chilies, and stir-fry until fragrant.
  3. Add the garlic, ginger, and green onions, and stir-fry for another minute.
  4. Add the pig's kidneys and stir-fry until browned.
  5. Stir in the soy sauce, Shaoxing wine, sugar, and salt, and cook for a few more minutes.
  6. Transfer to a serving dish and garnish with additional green onions if desired.
