Ingredients
- 500g pig's kidneys, cleaned and sliced
- 3 tbsp vegetable oil
- 2 tbsp Sichuan peppercorns
- 3-4 dried red chilies, chopped
- 3 cloves garlic, minced
- 1 inch ginger, julienned
- 2 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp Shaoxing wine
- 1 tsp sugar
- Salt to taste
Instructions
- Heat a wok over high heat and add the vegetable oil.
- Add the Sichuan peppercorns and dried red chilies, and stir-fry until fragrant.
- Add the garlic, ginger, and green onions, and stir-fry for another minute.
- Add the pig's kidneys and stir-fry until browned.
- Stir in the soy sauce, Shaoxing wine, sugar, and salt, and cook for a few more minutes.
- Transfer to a serving dish and garnish with additional green onions if desired.
