Ingredients
- 500g fresh squid, cleaned and sliced
- 2 tablespoons La Jiao You (Chinese chili oil)
- 2 cloves garlic, minced
- 1 tablespoon Shaoxing wine
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon Sichuan peppercorns, toasted and ground
- 2 green onions, chopped
- 1 red chili, sliced
- 1 teaspoon cornstarch
- 2 tablespoons vegetable oil
- Salt to taste
Instructions
- In a small bowl, mix the Shaoxing wine, soy sauce, sugar, and cornstarch. Set aside.
- Heat the vegetable oil in a wok or large skillet over high heat. Add the squid and stir-fry for 2-3 minutes until just cooked. Remove the squid from the wok and set aside.
- In the same wok, add the La Jiao You (Chinese chili oil), garlic, Sichuan peppercorns, green onions, and red chili. Stir-fry for 1-2 minutes until fragrant.
- Return the cooked squid to the wok. Pour in the sauce mixture and stir-fry for another 1-2 minutes until the sauce thickens and coats the squid evenly.
- Season with salt to taste and transfer to a serving dish.
