Ingredients

  • 250g La Serena cheese
  • 200g sugar
  • 4 eggs
  • 200ml heavy cream
  • 1 tsp vanilla extract
  • 200g graham cracker crumbs
  • 100g unsalted butter, melted

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan to create the crust.
  3. In a separate bowl, beat the La Serena cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the heavy cream and vanilla extract.
  4. Pour the cheese mixture over the crust in the springform pan.
  5. Bake for 45 minutes, or until the center is almost set.
  6. Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours before serving.
