Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 2 tbsp vegetable oil
  • 4-5 dried red chili peppers, deseeded and cut into small pieces
  • 3 cloves garlic, minced
  • 1-inch ginger, julienned
  • 2 green onions, sliced
  • 2 tbsp soy sauce
  • 1 tbsp Shaoxing wine (Chinese cooking wine)
  • 1 tsp sugar
  • 1/2 tsp Sichuan peppercorns, toasted and ground
  • Salt to taste

Instructions

  1. Marinate the beef slices with soy sauce, Shaoxing wine, and sugar for 15 minutes.
  2. Heat vegetable oil in a wok or skillet over high heat. Add the dried chili peppers and stir-fry until fragrant.
  3. Add the marinated beef slices and stir-fry for 2-3 minutes until they are just cooked. Remove from the wok and set aside.
  4. In the same wok, add a bit more oil if needed. Stir-fry the garlic, ginger, and green onions until aromatic.
  5. Return the beef to the wok, add the Sichuan peppercorn, and stir-fry for another minute. Season with salt to taste.
  6. Transfer to a serving plate and garnish with additional sliced green onions if desired.
