Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

  • 6-8 dried red chilies
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 green onions, chopped
  • 1/4 cup Sichuan peppercorns
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sugar

Instructions

  1. In a large bowl, toss the chicken pieces with the cornstarch until evenly coated.
  2. Heat the vegetable oil in a wok or large skillet over high heat. Add the chicken and cook until golden and crispy, about 5-6 minutes. Remove the chicken from the wok and set aside.
  3. In the same wok, add the dried red chilies, garlic, ginger, green onions, and Sichuan peppercorns. Stir-fry for 1-2 minutes until fragrant.
  4. Return the cooked chicken to the wok. Add the soy sauce, rice vinegar, and sugar. Toss everything together until the chicken is evenly coated in the spicy sauce.
  5. Transfer the La Zi Ji to a serving dish and garnish with additional chopped green onions, if desired.
