Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/2 cup cornstarch
- 1/4 cup vegetable oil
- 6-8 dried red chilies
- 3 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2 green onions, chopped
- 1/4 cup Sichuan peppercorns
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sugar
Instructions
- In a large bowl, toss the chicken pieces with the cornstarch until evenly coated.
- Heat the vegetable oil in a wok or large skillet over high heat. Add the chicken and cook until golden and crispy, about 5-6 minutes. Remove the chicken from the wok and set aside.
- In the same wok, add the dried red chilies, garlic, ginger, green onions, and Sichuan peppercorns. Stir-fry for 1-2 minutes until fragrant.
- Return the cooked chicken to the wok. Add the soy sauce, rice vinegar, and sugar. Toss everything together until the chicken is evenly coated in the spicy sauce.
- Transfer the La Zi Ji to a serving dish and garnish with additional chopped green onions, if desired.
