La Zi Ji (spicy Szechuan Chicken)
La Zi Ji, also known as Spicy Szechuan Chicken, is a popular dish in Pakistani Chinese cuisine. This flavorful and spicy chicken dish is a perfect combination of Szechuan peppercorns, chili peppers, and mouth-numbing spices.
Ingredients
- 1 lb boneless chicken, cut into small pieces
- 2 tbsp Szechuan peppercorns
- 4-5 dried red chili peppers
- 3-4 cloves garlic, minced
- 1-inch ginger, grated
- 2 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sugar
- 1 tsp cornstarch
- 1/4 cup vegetable oil
- Salt to taste
Instructions
- Heat the vegetable oil in a wok or large skillet over medium-high heat.
- Add the Szechuan peppercorns and dried red chili peppers. Stir-fry for 1-2 minutes until fragrant.
- Add the chicken pieces and stir-fry for 5-6 minutes until they are cooked through.
- Push the chicken to the side of the wok and add the garlic, ginger, and green onions. Stir-fry for 1-2 minutes.
- In a small bowl, mix together the soy sauce, rice vinegar, sugar, and cornstarch. Pour the sauce over the chicken and stir to coat evenly.
- Cook for an additional 2-3 minutes until the sauce thickens and coats the chicken.
- Season with salt to taste and garnish with additional chopped green onions, if desired.
