La Zi Ji Zhua (spicy Chicken Feet)

Ingredients

  • 1 kg chicken feet
  • 3 tbsp Sichuan peppercorns
  • 5 dried red chilies
  • 3 green onions, chopped
  • 4 slices ginger
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp Chinese black vinegar
  • 2 tbsp sugar
  • 1/4 cup cooking oil
  • Salt to taste

Instructions

  1. Wash the chicken feet and trim the nails. Place them in a pot of boiling water for 5 minutes, then drain and set aside.
  2. In a wok, heat the cooking oil over medium heat. Add the Sichuan peppercorns and dried red chilies, and stir-fry until fragrant.
  3. Add the green onions, ginger, and garlic to the wok. Stir-fry for a few minutes until aromatic.
  4. Add the chicken feet to the wok and stir-fry for 5 minutes.
  5. Pour in the soy sauce, Chinese black vinegar, and sugar. Stir well to coat the chicken feet.
  6. Add enough water to cover the chicken feet. Bring to a boil, then reduce heat and simmer for 1 hour, or until the chicken feet are tender.
  7. Season with salt to taste and serve hot.
