La Zi Ji Zhua (spicy Chicken Feet)

Ingredients
- 1 kg chicken feet
- 3 tbsp Sichuan peppercorns
- 5 dried red chilies
- 3 green onions, chopped
- 4 slices ginger
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tbsp Chinese black vinegar
- 2 tbsp sugar
- 1/4 cup cooking oil
- Salt to taste
Instructions
- Wash the chicken feet and trim the nails. Place them in a pot of boiling water for 5 minutes, then drain and set aside.
- In a wok, heat the cooking oil over medium heat. Add the Sichuan peppercorns and dried red chilies, and stir-fry until fragrant.
- Add the green onions, ginger, and garlic to the wok. Stir-fry for a few minutes until aromatic.
- Add the chicken feet to the wok and stir-fry for 5 minutes.
- Pour in the soy sauce, Chinese black vinegar, and sugar. Stir well to coat the chicken feet.
- Add enough water to cover the chicken feet. Bring to a boil, then reduce heat and simmer for 1 hour, or until the chicken feet are tender.
- Season with salt to taste and serve hot.
