Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons Sichuan peppercorns
- 3 tablespoons vegetable oil
- 4 cloves garlic, minced
- 2 tablespoons ginger, minced
- 2-3 tablespoons dried red chilies, chopped
- 2 green onions, chopped
- 1 tablespoon soy sauce
- 1 tablespoon Shaoxing wine
- 1 teaspoon sugar
- Salt to taste
Instructions
- Heat a wok or large skillet over high heat. Add the Sichuan peppercorns and dry roast them for 1-2 minutes until fragrant. Remove from the wok and crush them using a mortar and pestle. Set aside.
- Heat the vegetable oil in the same wok over high heat. Add the garlic, ginger, and dried red chilies. Stir-fry for about 30 seconds until fragrant.
- Add the shrimp to the wok and stir-fry for 2-3 minutes until they turn pink and opaque.
- Stir in the crushed Sichuan peppercorns, green onions, soy sauce, Shaoxing wine, sugar, and salt. Cook for another 1-2 minutes, stirring constantly.
- Transfer the spicy Manchu Sichuan shrimp to a serving dish and serve hot.
