Laba Garlic
Laba garlic is a traditional Chinese dish typically enjoyed during the Winter Solstice Festival. It is made by fermenting garlic in a mixture of vinegar and sugar, resulting in a sweet and tangy flavor with a hint of garlic aroma.
Ingredients
- 1 pound fresh garlic cloves
- 1 cup rice vinegar
- 1/2 cup sugar
Instructions
- Peel the garlic cloves and place them in a clean, sterilized glass jar.
- In a small saucepan, combine the rice vinegar and sugar. Heat over low heat, stirring until the sugar is dissolved. Remove from heat and let it cool to room temperature.
- Pour the cooled vinegar mixture over the garlic cloves in the jar, ensuring the garlic is completely submerged.
- Cover the jar with a clean cloth or paper towel and secure it with a rubber band. Place the jar in a cool, dark place for 2 weeks to allow the garlic to ferment.
- After 2 weeks, the laba garlic is ready to be enjoyed. Store in the refrigerator for up to 3 months.
