Ingredients

  • 2 cans (15 oz) chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • 1 bunch spinach, chopped
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Fresh parsley for garnish
  • Slices of crusty bread for serving

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, ground cumin, coriander, paprika, and cayenne pepper to the pot. Cook for 1-2 minutes until fragrant.
  3. Pour in the vegetable broth and add the chickpeas. Bring the stew to a simmer and let it cook for 20 minutes.
  4. Add the chopped spinach to the pot and cook for an additional 5 minutes until wilted.
  5. Season the lablabi with salt and pepper to taste.
