Lablabi is a traditional Tunisian stew made with chickpeas and spinach, flavored with warming spices and served with crusty bread. It's a hearty and comforting dish that's perfect for a cozy meal.
Ingredients
- 2 cans (15 oz) chickpeas, drained and rinsed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 4 cups vegetable broth
- 1 bunch spinach, chopped
- Salt and pepper to taste
- Olive oil for drizzling
- Fresh parsley for garnish
- Slices of crusty bread for serving
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, coriander, paprika, and cayenne pepper to the pot. Cook for 1-2 minutes until fragrant.
- Pour in the vegetable broth and add the chickpeas. Bring the stew to a simmer and let it cook for 20 minutes.
- Add the chopped spinach to the pot and cook for an additional 5 minutes until wilted.
- Season the lablabi with salt and pepper to taste.
- To serve, ladle the stew into bowls, drizzle with olive oil, and garnish with fresh parsley. Serve with slices of crusty bread.
