Lablabi is a popular Tunisian spiced lentil and vegetable curry that is packed with flavor and warmth. This hearty and comforting dish is perfect for a cozy meal, especially during the colder months.
Ingredients
- 2 cups dried brown lentils
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 tomatoes, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 6 cups vegetable broth
- Salt and pepper to taste
- 4 slices of day-old bread
- Extra virgin olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat some olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the diced carrots and chopped tomatoes to the pot, and cook for a few minutes until the vegetables start to soften.
- Stir in the ground cumin, coriander, paprika, and cayenne pepper, and cook for another minute to toast the spices.
- Pour in the vegetable broth and add the rinsed lentils. Season with salt and pepper, then bring the mixture to a boil.
- Reduce the heat to a simmer and cook for about 30-35 minutes, or until the lentils are tender.
- While the lentils are cooking, toast the slices of bread until crispy.
- To serve, place a slice of toasted bread in each bowl and ladle the hot lentil curry over the bread.
- Drizzle with a little extra virgin olive oil and garnish with chopped fresh parsley.
