Ingredients
- 2 cups dried brown lentils
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon ground cumin

- 6 cups vegetable broth
- 1 lemon, juiced
- Salt to taste
- Olive oil for drizzling

Instructions
- In a large pot, sauté the chopped onion and minced garlic until softened.
- Add the ground cumin, coriander, and cayenne pepper to the pot, and cook for 1-2 minutes to toast the spices.
- Rinse the dried lentils and add them to the pot, then pour in the vegetable broth.
- Bring the soup to a boil, then reduce the heat and let it simmer for 45-50 minutes, or until the lentils are tender.
- Stir in the lemon juice and season with salt to taste.
