Lablabi (tunisian Spiced Pumpkin Soup)
Lablabi is a traditional Tunisian spiced pumpkin soup that is perfect for warming up on a chilly day. This hearty and flavorful soup is packed with Tunisian spices and is sure to become a new favorite in your soup rotation.
Ingredients
- 1 small pumpkin, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can chickpeas, drained and rinsed
- 4 cups vegetable broth
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- Olive oil for cooking
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced pumpkin, chickpeas, ground cumin, ground coriander, and cayenne pepper to the pot. Stir to combine the ingredients.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let the soup simmer for about 20 minutes, or until the pumpkin is tender.
- Once the pumpkin is cooked, use an immersion blender to blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches and blend until smooth.
- Season the soup with salt and pepper to taste.
- Serve the lablabi hot, garnished with fresh cilantro.
