Lablabi (tunisian Spiced Tomato Soup)
Lablabi is a traditional Tunisian spiced tomato soup that is hearty, flavorful, and perfect for warming up on a cold day. This soup is packed with protein and spices, making it a satisfying and delicious meal.
Ingredients
- 2 cans (14 oz) chickpeas, drained and rinsed
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 2 teaspoons ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 4 slices of day-old bread
- 4 eggs
- Fresh parsley for garnish
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the chickpeas, diced tomatoes, vegetable broth, cumin, paprika, cayenne pepper, salt, and pepper. Bring to a simmer and cook for 20 minutes.
- Toast the bread slices and place one in each serving bowl.
- Pour the soup over the bread slices.
- Poach an egg for each serving and place it on top of the soup.
- Garnish with fresh parsley and serve hot.
