Ingredients

  • 2 cans (14 oz) chickpeas, drained and rinsed
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 4 slices of day-old bread
  • 4 eggs
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the chickpeas, diced tomatoes, vegetable broth, cumin, paprika, cayenne pepper, salt, and pepper. Bring to a simmer and cook for 20 minutes.
  3. Toast the bread slices and place one in each serving bowl.
  4. Pour the soup over the bread slices.
  5. Poach an egg for each serving and place it on top of the soup.
  6. Garnish with fresh parsley and serve hot.
