Labuan Seafood Paella
Labuan Seafood Paella is a delicious and flavorful dish that originates from the Sabahan Cuisine. This dish is a perfect combination of fresh seafood, aromatic rice, and a blend of spices that will transport you to the beautiful coasts of Labuan.
Ingredients
- 2 cups of short-grain rice
- 500g mixed seafood (prawns, squid, mussels)
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 tomato, diced
- 1 teaspoon smoked paprika
- 1 teaspoon saffron threads
- 4 cups of seafood or chicken broth
- 1/4 cup of frozen peas
- 1 lemon, cut into wedges
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- In a paella pan or large skillet, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Stir in the sliced red bell pepper and diced tomato, and cook for a few minutes.
- Add the mixed seafood to the pan and cook until they start to turn opaque.
- Sprinkle the smoked paprika and saffron threads over the seafood and vegetables, then add the short-grain rice to the pan.
- Pour in the seafood or chicken broth and bring the mixture to a simmer. Cook for about 20-25 minutes or until the rice is tender and has absorbed the liquid.
- Stir in the frozen peas and season with salt and pepper to taste.
- Remove the pan from the heat and let it rest for a few minutes before serving with lemon wedges.
