Labuan Seafood Paella

Ingredients

  • 2 cups of short-grain rice
  • 500g mixed seafood (prawns, squid, mussels)
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 tomato, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon saffron threads
  • 4 cups of seafood or chicken broth
  • 1/4 cup of frozen peas
  • 1 lemon, cut into wedges
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions

  1. In a paella pan or large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Stir in the sliced red bell pepper and diced tomato, and cook for a few minutes.
  4. Add the mixed seafood to the pan and cook until they start to turn opaque.
  5. Sprinkle the smoked paprika and saffron threads over the seafood and vegetables, then add the short-grain rice to the pan.
  6. Pour in the seafood or chicken broth and bring the mixture to a simmer. Cook for about 20-25 minutes or until the rice is tender and has absorbed the liquid.
  7. Stir in the frozen peas and season with salt and pepper to taste.
  8. Remove the pan from the heat and let it rest for a few minutes before serving with lemon wedges.
