Lachanodolmades Me Rizi Kai Fytika (stuffed Cabbage Rolls With Rice And Herbs)
Lachanodolmades me Rizi kai Fytika, or Stuffed Cabbage Rolls with Rice and Herbs, is a traditional dish from the Ionian Islands. These delicious cabbage rolls are filled with a flavorful mixture of rice, herbs, and vegetables, making them a perfect option for a satisfying and comforting meal.
Ingredients
- 1 large head of cabbage
- 1 cup uncooked rice
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1/4 cup olive oil
- Salt and pepper to taste
- 1 lemon, sliced (for garnish)
Instructions
- Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes until they are pliable. Remove and set aside.
- In a bowl, combine the uncooked rice, chopped onion, diced tomatoes, parsley, dill, olive oil, salt, and pepper. Mix well.
- Place a spoonful of the rice mixture in the center of each cabbage leaf. Fold the sides of the leaf over the filling and roll it up tightly.
- Place the stuffed cabbage rolls in a large pot, seam side down, in a single layer. Add enough water to cover the rolls, then place a heavy plate on top to keep them submerged.
- Cover the pot and simmer over low heat for 1 hour, or until the rice is fully cooked and the cabbage is tender.
- Once cooked, remove the cabbage rolls from the pot and arrange them on a serving platter. Garnish with lemon slices and serve hot.
