Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon turmeric powder

  • 2 1/2 cups coconut milk
  • 1 egg
  • 1/2 cup water
  • 2 tablespoons melted butter

Instructions

  1. In a mixing bowl, combine the all-purpose flour, turmeric powder, and salt.
  2. In a separate bowl, whisk together the coconut milk, egg, and water.
  3. Add the wet ingredients to the dry ingredients and mix until smooth.
  4. Transfer the batter to a squeeze bottle or a special roti jala mold.
  5. Heat a non-stick pan over medium heat and lightly grease it with melted butter.
  6. Squeeze the batter in a lacy pattern onto the pan and cook for 1-2 minutes until the pancake is set.
  7. Fold the pancake into a triangle shape and transfer to a serving plate.
  8. Repeat the process with the remaining batter.
