Lae Chicken (island Spice Chicken)

Ingredients

  • 4 chicken thighs
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil

Instructions

  1. In a small bowl, mix together the soy sauce, brown sugar, ground ginger, garlic powder, paprika, cayenne pepper, black pepper, and salt to make the marinade.
  2. Place the chicken thighs in a large resealable plastic bag and pour the marinade over the chicken. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 2 hours, or overnight for best results.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade and shake off any excess. Discard the remaining marinade.
  4. Cook the chicken in the hot oil until browned on all sides, about 5 minutes per side.
  5. Reduce the heat to medium-low, cover the skillet, and cook until the chicken is no longer pink at the bone and the juices run clear, about 30 minutes.
  6. Transfer the chicken to a serving platter and let it rest for 5 minutes before serving.
