Lagan nu Custard (लगन नूं कस्टर्ड)

Ingredients

  • 6 cups whole milk
  • 1 cup sugar
  • 1/2 cup water
  • 1/4 cup cornflour
  • 1/4 cup chopped mixed nuts (almonds, pistachios, cashews)
  • 1/4 cup golden raisins
  • 1 tsp vanilla extract
  • 1/2 tsp ground cardamom

Instructions

  1. In a heavy-bottomed pan, bring the milk to a boil over medium heat, stirring occasionally to prevent scorching.
  2. In a separate saucepan, combine the sugar and water and cook over medium heat until the sugar dissolves, stirring constantly.
  3. In a small bowl, mix the cornflour with a little water to form a smooth paste.
  4. Once the milk comes to a boil, reduce the heat and slowly add the cornflour paste, stirring continuously to avoid lumps.
  5. Add the sugar syrup to the milk mixture and continue to cook over low heat, stirring constantly, until the custard thickens.
  6. Remove the pan from the heat and stir in the chopped nuts, raisins, vanilla extract, and ground cardamom.
  7. Pour the custard into individual serving dishes or a large serving bowl and refrigerate for at least 4 hours or until set.
  8. Garnish with additional nuts and serve chilled.
