Lagan nu Custard (लगन नूं कस्टर्ड)
लगन नूं कस्टर्ड (Lagan nu Custard) is a traditional Parsi dessert that is rich, creamy, and full of flavor. It is a popular dish served during special occasions and celebrations.
Ingredients
- 6 cups whole milk
- 1 cup sugar
- 1/2 cup water
- 1/4 cup cornflour
- 1/4 cup chopped mixed nuts (almonds, pistachios, cashews)
- 1/4 cup golden raisins
- 1 tsp vanilla extract
- 1/2 tsp ground cardamom
Instructions
- In a heavy-bottomed pan, bring the milk to a boil over medium heat, stirring occasionally to prevent scorching.
- In a separate saucepan, combine the sugar and water and cook over medium heat until the sugar dissolves, stirring constantly.
- In a small bowl, mix the cornflour with a little water to form a smooth paste.
- Once the milk comes to a boil, reduce the heat and slowly add the cornflour paste, stirring continuously to avoid lumps.
- Add the sugar syrup to the milk mixture and continue to cook over low heat, stirring constantly, until the custard thickens.
- Remove the pan from the heat and stir in the chopped nuts, raisins, vanilla extract, and ground cardamom.
- Pour the custard into individual serving dishes or a large serving bowl and refrigerate for at least 4 hours or until set.
- Garnish with additional nuts and serve chilled.
