Lagan nu Stew (लगन नूं स्टू)

Ingredients

  • 1 cup diced potatoes
  • 1 cup diced carrots
  • 1 cup diced onions
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers
  • 1 cup green peas
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • 4 cups vegetable broth

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add cumin seeds and let them sizzle for a few seconds.
  3. Add diced onions and sauté until they turn golden brown.
  4. Add turmeric powder, red chili powder, and garam masala. Stir well.
  5. Add diced potatoes, carrots, tomatoes, bell peppers, and green peas. Mix everything together.
  6. Pour in the vegetable broth and season with salt. Bring to a boil.
  7. Reduce the heat to low, cover the pot, and let the stew simmer for 45-50 minutes or until the vegetables are tender.
  8. Once done, serve the lagan nu stew hot with crusty bread or steamed rice.
