Ingredients
- 1 cup diced potatoes
- 1 cup diced carrots
- 1 cup diced onions
- 1 cup diced tomatoes
- 1 cup diced bell peppers
- 1 cup green peas
- 2 tbsp vegetable oil
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- Salt to taste
- 4 cups vegetable broth
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add cumin seeds and let them sizzle for a few seconds.
- Add diced onions and sauté until they turn golden brown.
- Add turmeric powder, red chili powder, and garam masala. Stir well.
- Add diced potatoes, carrots, tomatoes, bell peppers, and green peas. Mix everything together.
- Pour in the vegetable broth and season with salt. Bring to a boil.
- Reduce the heat to low, cover the pot, and let the stew simmer for 45-50 minutes or until the vegetables are tender.
- Once done, serve the lagan nu stew hot with crusty bread or steamed rice.
