Ingredients
- 2 lbs fresh crab, cleaned and cracked
- 1 can (14 oz) coconut milk
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 stalks lemongrass, bruised
- 1 inch ginger, grated
- 2-3 red chilies, sliced
- 1 tbsp curry powder
- 1 tsp turmeric powder
- Salt to taste
- 2 tbsp cooking oil
- 1 cup water
- Fresh cilantro for garnish
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, grated ginger, and sliced red chilies. Sauté until the onions are soft and translucent.
- Stir in the curry powder and turmeric powder, and cook for 1-2 minutes to release the flavors.
- Pour in the coconut milk and water. Add the bruised lemongrass and season with salt. Bring the mixture to a gentle simmer.
- Add the cleaned and cracked crab to the pot, ensuring they are submerged in the coconut curry mixture. Cover and cook for 15-20 minutes, or until the crab is cooked through.
- Once the crab is cooked, remove the lemongrass stalks. Garnish with fresh cilantro before serving.
