Lahana Sarma is a traditional Gagauz dish of stuffed cabbage rolls, filled with a flavorful mixture of rice, meat, and spices. This hearty and comforting dish is a staple in Gagauz cuisine, perfect for a cozy family dinner or special occasions.
Ingredients
- 1 large head of cabbage
- 1 cup uncooked rice
- 1 lb ground meat (beef or lamb)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 cups tomato juice
Instructions
- Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes, until they are pliable. Remove and set aside to cool.
- In a bowl, mix the uncooked rice, ground meat, onion, garlic, paprika, cumin, salt, and pepper until well combined.
- Place a spoonful of the meat and rice mixture onto each cabbage leaf, then roll them up, tucking in the sides to create a neat roll.
- Place the stuffed cabbage rolls in a large pot, seam side down. Pour the tomato juice over the rolls, then cover and simmer for 1 hour, until the cabbage is tender and the filling is cooked through.
- Serve the Lahana Sarma hot, with a dollop of sour cream or yogurt if desired.
