Ingredients
- 1 large head of cabbage
- 1 cup uncooked rice
- 1 onion, finely chopped
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh parsley
- 1/2 cup olive oil
- Salt and pepper to taste
- 4 cups vegetable broth
- 3 eggs
- Juice of 2 lemons
Instructions
- Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes, until they are pliable. Remove and set aside to cool.
- In a bowl, combine the uncooked rice, chopped onion, dill, parsley, 1/4 cup of olive oil, salt, and pepper. Mix well.
- Place a spoonful of the rice mixture onto each cabbage leaf and roll them up, tucking in the sides as you go.
- Place the cabbage rolls in a large pot, seam side down. Pour the vegetable broth over the rolls and drizzle with the remaining olive oil.
- Cover the pot and cook the cabbage rolls over medium heat for 45-50 minutes, until the rice is tender.
- In a separate bowl, whisk together the eggs and lemon juice to make the avgolemono sauce.
- Once the cabbage rolls are cooked, carefully ladle some of the hot broth into the egg-lemon mixture, whisking constantly to temper the eggs.
- Pour the avgolemono sauce over the cabbage rolls and simmer for an additional 5 minutes, until the sauce thickens slightly.
- Serve the Lahanodolmades Avgolemono warm, garnished with a sprinkle of fresh dill.
