Ingredients

  • 1 large head of cabbage
  • 1 cup uncooked rice
  • 1 onion, finely chopped
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • 4 cups vegetable broth
  • 3 eggs
  • Juice of 2 lemons

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes, until they are pliable. Remove and set aside to cool.
  2. In a bowl, combine the uncooked rice, chopped onion, dill, parsley, 1/4 cup of olive oil, salt, and pepper. Mix well.
  3. Place a spoonful of the rice mixture onto each cabbage leaf and roll them up, tucking in the sides as you go.
  4. Place the cabbage rolls in a large pot, seam side down. Pour the vegetable broth over the rolls and drizzle with the remaining olive oil.
  5. Cover the pot and cook the cabbage rolls over medium heat for 45-50 minutes, until the rice is tender.
  6. In a separate bowl, whisk together the eggs and lemon juice to make the avgolemono sauce.
  7. Once the cabbage rolls are cooked, carefully ladle some of the hot broth into the egg-lemon mixture, whisking constantly to temper the eggs.
  8. Pour the avgolemono sauce over the cabbage rolls and simmer for an additional 5 minutes, until the sauce thickens slightly.
