Ingredients

  • 1 kg lamb, cut into cubes
  • 4 large potatoes, peeled and cubed
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 4 cups chicken or beef broth
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the lamb cubes to the pot and brown on all sides.
  3. Stir in the diced tomatoes, tomato paste, and spices. Cook for a few minutes until fragrant.
  4. Pour in the chicken or beef broth and bring the stew to a boil. Reduce the heat, cover, and simmer for 1.5 hours, or until the lamb is tender.
  5. Add the cubed potatoes to the stew and continue to simmer for an additional 30 minutes, or until the potatoes are cooked through.
