Ingredients
- 1 kg lamb, cut into cubes
- 4 large potatoes, peeled and cubed
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 4 cups chicken or beef broth
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the lamb cubes to the pot and brown on all sides.
- Stir in the diced tomatoes, tomato paste, and spices. Cook for a few minutes until fragrant.
- Pour in the chicken or beef broth and bring the stew to a boil. Reduce the heat, cover, and simmer for 1.5 hours, or until the lamb is tender.
- Add the cubed potatoes to the stew and continue to simmer for an additional 30 minutes, or until the potatoes are cooked through.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
