Ingredients

  • 1 lb lamb, cubed
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups chicken broth
  • 1/4 cup tomato paste
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the lamb and cook until browned on all sides. Remove the lamb from the pot and set aside.
  2. In the same pot, add the chopped onion and cook until softened. Add the minced garlic, ground cumin, ground coriander, cayenne pepper, and paprika. Cook for 1-2 minutes until fragrant.
  3. Return the browned lamb to the pot. Add the chickpeas, chicken broth, and tomato paste. Season with salt and pepper. Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the lamb is tender.
  4. Once the stew is ready, taste and adjust the seasoning if needed. Serve the Lahm Bil Hummus hot, garnished with fresh cilantro.
