Ingredients

  • 2 large eggplants
  • 2 tomatoes, finely chopped
  • 1 onion, finely chopped
  • 3-4 green chilies, finely chopped
  • 1/2 cup cilantro, chopped
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced
  • 1 tsp cumin seeds
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • Salt to taste
  • 3 tbsp oil

Instructions

  1. Preheat the oven to 400°F (200°C). Prick the eggplants with a fork and roast them in the oven for 30-40 minutes until the skin is charred and the flesh is soft. Let them cool, then peel off the skin and mash the flesh.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add onions and sauté until golden brown.
  3. Add ginger, garlic, and green chilies. Sauté for 2 minutes.
  4. Add tomatoes, red chili powder, turmeric powder, coriander powder, and salt. Cook until the tomatoes are soft and the oil separates.
  5. Add the mashed eggplant and mix well. Cook for 5-7 minutes, stirring occasionally.
  6. Garnish with chopped cilantro and serve hot with naan or rice.
