Ingredients
- 2 large eggplants
- 2 tomatoes, finely chopped
- 1 onion, finely chopped
- 3-4 green chilies, finely chopped
- 1/2 cup cilantro, chopped
- 1 tsp ginger, minced
- 1 tsp garlic, minced
- 1 tsp cumin seeds
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- Salt to taste
- 3 tbsp oil
Instructions
- Preheat the oven to 400°F (200°C). Prick the eggplants with a fork and roast them in the oven for 30-40 minutes until the skin is charred and the flesh is soft. Let them cool, then peel off the skin and mash the flesh.
- Heat oil in a pan and add cumin seeds. Once they splutter, add onions and sauté until golden brown.
- Add ginger, garlic, and green chilies. Sauté for 2 minutes.
- Add tomatoes, red chili powder, turmeric powder, coriander powder, and salt. Cook until the tomatoes are soft and the oil separates.
- Add the mashed eggplant and mix well. Cook for 5-7 minutes, stirring occasionally.
- Garnish with chopped cilantro and serve hot with naan or rice.
