Ingredients

  • 2 cups yogurt
  • 1/2 cup gram flour (besan)
  • 1 onion, finely chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon fenugreek seeds
  • 1/2 teaspoon mustard seeds
  • 1/4 teaspoon asafoetida (hing)
  • 1 inch ginger, grated
  • 3-4 green chilies, chopped
  • 1/4 cup fresh coriander leaves, chopped
  • 1/2 cup water
  • Salt to taste
  • Oil for frying

Instructions

  1. In a bowl, whisk together yogurt, gram flour, and water to make a smooth mixture.
  2. Heat oil in a deep pan for frying.
  3. Dip spoonfuls of the gram flour mixture into the hot oil to make pakoras and fry until golden brown.
  4. In a separate pot, heat some oil and add cumin seeds, fenugreek seeds, mustard seeds, and asafoetida.
  5. Add chopped onions, ginger, and green chilies. Sauté until onions are golden brown.
  6. Pour in the yogurt mixture and add turmeric, red chili powder, and salt. Cook on low heat, stirring continuously, until the kadhi thickens.
  7. Add the fried pakoras to the kadhi and simmer for a few minutes.
  8. Garnish with fresh coriander leaves before serving.
