Ingredients

  • 2 lbs mutton, cut into pieces
  • 3 cups basmati rice, soaked
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 1/4 cup ghee
  • 1/4 cup cooking oil
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup ginger-garlic paste
  • 2 green chilies, slit
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1/2 tsp saffron strands, soaked in 1/4 cup warm milk
  • Salt to taste

Instructions

  1. Heat ghee and oil in a large pot. Add cumin seeds and sliced onions. Sauté until onions are golden brown.
  2. Add mutton pieces, ginger-garlic paste, and sauté until the mutton is browned.
  3. Stir in chopped tomatoes, yogurt, green chilies, and all the spices. Cook until the oil separates.
  4. Layer the soaked rice over the mutton mixture. Sprinkle chopped coriander and mint leaves on top.
  5. Pour the saffron-infused milk over the rice. Cover and cook on low heat until the rice and mutton are fully cooked.
  6. Once done, gently mix the biryani before serving.
