Ingredients
- 2 lbs mutton, cut into pieces
- 3 cups basmati rice, soaked
- 1 cup yogurt
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 1/4 cup ghee
- 1/4 cup cooking oil
- 1/4 cup fresh coriander leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup ginger-garlic paste
- 2 green chilies, slit
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp cumin seeds
- 1 tsp garam masala
- 1/2 tsp saffron strands, soaked in 1/4 cup warm milk
- Salt to taste
Instructions
- Heat ghee and oil in a large pot. Add cumin seeds and sliced onions. Sauté until onions are golden brown.
- Add mutton pieces, ginger-garlic paste, and sauté until the mutton is browned.
- Stir in chopped tomatoes, yogurt, green chilies, and all the spices. Cook until the oil separates.
- Layer the soaked rice over the mutton mixture. Sprinkle chopped coriander and mint leaves on top.
- Pour the saffron-infused milk over the rice. Cover and cook on low heat until the rice and mutton are fully cooked.
- Once done, gently mix the biryani before serving.
