Ingredients

  • 1 kg mutton, cut into pieces
  • 3 cups basmati rice, soaked
  • 2 onions, thinly sliced
  • 1/2 cup yogurt
  • 4 tomatoes, chopped
  • 2 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1/2 cup mint leaves
  • 1/2 cup coriander leaves
  • 4 green chilies, slit
  • 1/2 cup ghee
  • 4 cups water
  • Salt to taste

Instructions

  1. Heat ghee in a large pot and fry the sliced onions until golden brown. Remove half of the fried onions and set aside for garnishing.
  2. Add mutton pieces to the pot and cook until they are browned.
  3. Stir in ginger-garlic paste, red chili powder, turmeric powder, and salt. Cook for a few minutes.
  4. Add yogurt, tomatoes, mint leaves, and coriander leaves. Cook until the tomatoes are soft.
  5. Layer soaked rice over the mutton mixture and pour water over the rice.
  6. Sprinkle garam masala, green chilies, and the reserved fried onions on top.
  7. Cover the pot and cook on low heat until the mutton is tender and the rice is cooked through.
  8. Once done, gently mix the rice and mutton together before serving.
