Lahori Paya (لہوری پایا)

Ingredients

  • 4 lamb trotters (paya)
  • 2 onions, finely chopped
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon turmeric powder
  • 1 tablespoon red chili powder
  • 1 tablespoon coriander powder
  • 1 teaspoon garam masala
  • 4 cups water
  • Salt to taste

Instructions

  1. Wash the lamb trotters thoroughly and set aside.
  2. In a large pot, heat some oil and sauté the onions until golden brown.
  3. Add the ginger and garlic paste, and cook for a few minutes until the raw smell disappears.
  4. Add the lamb trotters to the pot and cook for 10 minutes, stirring occasionally.
  5. Then add the turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well and cook for another 5 minutes.
  6. Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 3-4 hours until the trotters are tender and the broth is rich and flavorful.
  7. Serve hot with naan or paratha.
