Ingredients

  • 1 lb pork, cut into bite-sized pieces
  • 1 cup pickled tea leaves
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tomatoes, diced
  • 2 green chilies, sliced
  • 1 tsp turmeric powder
  • 1 tsp paprika
  • 1 tsp fish sauce
  • 2 tbsp cooking oil
  • Salt to taste

Instructions

  1. Heat oil in a large pot over medium heat. Add onions, garlic, and ginger. Sauté until fragrant.
  2. Add pork pieces and cook until browned.
  3. Stir in turmeric powder, paprika, and fish sauce. Mix well.
  4. Add pickled tea leaves, tomatoes, and green chilies. Cook for 5 minutes.
  5. Pour in enough water to cover the pork and tea leaves. Season with salt.
  6. Cover and simmer for 45 minutes to 1 hour, or until the pork is tender.
  7. Serve hot with steamed rice.
