Ingredients

  • 2 large beets, peeled and diced
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 3 potatoes, peeled and diced
  • 2 carrots, peeled and sliced
  • 1/2 cabbage, shredded
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup sour cream (optional, for serving)

Instructions

  1. In a large pot, combine the beets and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  2. Add the onion, potatoes, carrots, cabbage, garlic, tomato paste, bay leaves, salt, and black pepper to the pot. Simmer for an additional 30 minutes, or until the vegetables are tender.
  3. Remove the bay leaves and discard. Taste and adjust seasoning if necessary.
  4. Serve hot, with a dollop of sour cream if desired.
