Lake Baikal Borscht
Lake Baikal Borscht is a traditional soup from Buryat Cuisine, known for its rich flavors and hearty ingredients.
Ingredients
- 2 large beets, peeled and diced
- 4 cups vegetable broth
- 1 onion, chopped
- 3 potatoes, peeled and diced
- 2 carrots, peeled and sliced
- 1/2 cabbage, shredded
- 3 cloves garlic, minced
- 1 tablespoon tomato paste
- 2 bay leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup sour cream (optional, for serving)
Instructions
- In a large pot, combine the beets and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the onion, potatoes, carrots, cabbage, garlic, tomato paste, bay leaves, salt, and black pepper to the pot. Simmer for an additional 30 minutes, or until the vegetables are tender.
- Remove the bay leaves and discard. Taste and adjust seasoning if necessary.
- Serve hot, with a dollop of sour cream if desired.
