Ingredients

  • 2 cups fresh or frozen cloudberries

  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the flour, 1/2 cup sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add the cold water, tossing with a fork until the dough holds together.
  3. Divide the dough in half. Roll out one half to fit a 9-inch pie plate. Place the dough in the pie plate and trim the overhang.
  4. In a saucepan, combine the cloudberries, 1/2 cup sugar, and water. Bring to a boil. Reduce heat and simmer for 5 minutes.
  5. In a small bowl, mix the cornstarch with a little water to create a slurry. Stir the slurry into the berry mixture and cook until thickened, about 2 minutes.
  6. Pour the berry filling into the pie crust. Roll out the remaining dough and place it over the filling. Trim, seal, and flute the edges. Cut slits in the top crust.
  7. Bake for 35-40 minutes, or until the crust is golden brown. Allow the pie to cool before serving.
