Ingredients

  • 3 tablespoons laksa paste
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon vegetable oil
  • 1 red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 red chili, sliced
  • 1 cup bean sprouts
  • 1 bunch fresh cilantro, chopped
  • 2 hard-boiled eggs, halved
  • Lime wedges, for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the laksa paste and cook for 2 minutes, stirring constantly.
  2. Add the sliced red onion, minced garlic, and sliced red chili to the pot. Cook for another 3-4 minutes until the onions are soft and fragrant.
  3. Pour in the fish or vegetable stock and bring to a simmer. Add the coconut milk, fish sauce, and brown sugar. Stir well to combine.
  4. Add the white fish fillets and prawns to the pot. Let them cook for 5-6 minutes until the seafood is cooked through.
  5. While the seafood is cooking, prepare the rice vermicelli noodles according to the package instructions. Drain and set aside.
  6. To serve, divide the cooked noodles among serving bowls. Ladle the fish curry laksa over the noodles. Top with bean sprouts, chopped cilantro, and a halved hard-boiled egg. Serve with lime wedges on the side.
