Ingredients
- 400g white fish fillets, cut into chunks
- 200g prawns, peeled and deveined
- 200g rice vermicelli noodles
- 4 cups fish or vegetable stock
- 1 can (400ml) coconut milk
- 3 tablespoons laksa paste
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon vegetable oil
- 1 red onion, thinly sliced
- 2 cloves garlic, minced
- 1 red chili, sliced
- 1 cup bean sprouts
- 1 bunch fresh cilantro, chopped
- 2 hard-boiled eggs, halved
- Lime wedges, for serving
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the laksa paste and cook for 2 minutes, stirring constantly.
- Add the sliced red onion, minced garlic, and sliced red chili to the pot. Cook for another 3-4 minutes until the onions are soft and fragrant.
- Pour in the fish or vegetable stock and bring to a simmer. Add the coconut milk, fish sauce, and brown sugar. Stir well to combine.
- Add the white fish fillets and prawns to the pot. Let them cook for 5-6 minutes until the seafood is cooked through.
- While the seafood is cooking, prepare the rice vermicelli noodles according to the package instructions. Drain and set aside.
- To serve, divide the cooked noodles among serving bowls. Ladle the fish curry laksa over the noodles. Top with bean sprouts, chopped cilantro, and a halved hard-boiled egg. Serve with lime wedges on the side.
