Ingredients

  • 500g spaghetti or thick noodles
  • 200g prawns, peeled and deveined
  • 200g chicken breast, thinly sliced
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 4 tbsp chili paste
  • 2 tbsp tamarind paste
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 stalks lemongrass, bruised
  • 1 inch galangal, sliced
  • 1 tsp turmeric powder
  • 1 tsp sugar
  • Salt to taste
  • 4 hard-boiled eggs, halved
  • Bean sprouts, cucumber, and mint leaves for garnish

Instructions

  1. In a large pot, heat some oil and sauté the chopped onion and minced garlic until fragrant.
  2. Add the chili paste, turmeric powder, and tamarind paste. Cook for a few minutes until the oil separates.
  3. Pour in the chicken broth and add the lemongrass, galangal, and sugar. Simmer for 20 minutes.
  4. Add the coconut milk, prawns, and chicken. Cook for another 10-15 minutes until the prawns are pink and the chicken is cooked through.
  5. Cook the spaghetti or noodles according to the package instructions.
  6. To serve, place a portion of cooked noodles in a bowl, ladle the spicy soup over the noodles, and top with a halved hard-boiled egg, bean sprouts, cucumber, and mint leaves.
