Ingredients
- 500g spaghetti or thick noodles
- 200g prawns, peeled and deveined
- 200g chicken breast, thinly sliced
- 4 cups chicken broth
- 1 cup coconut milk
- 4 tbsp chili paste
- 2 tbsp tamarind paste
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 stalks lemongrass, bruised
- 1 inch galangal, sliced
- 1 tsp turmeric powder
- 1 tsp sugar
- Salt to taste
- 4 hard-boiled eggs, halved
- Bean sprouts, cucumber, and mint leaves for garnish
Instructions
- In a large pot, heat some oil and sauté the chopped onion and minced garlic until fragrant.
- Add the chili paste, turmeric powder, and tamarind paste. Cook for a few minutes until the oil separates.
- Pour in the chicken broth and add the lemongrass, galangal, and sugar. Simmer for 20 minutes.
- Add the coconut milk, prawns, and chicken. Cook for another 10-15 minutes until the prawns are pink and the chicken is cooked through.
- Cook the spaghetti or noodles according to the package instructions.
- To serve, place a portion of cooked noodles in a bowl, ladle the spicy soup over the noodles, and top with a halved hard-boiled egg, bean sprouts, cucumber, and mint leaves.
