Laksa Love Affair

Ingredients

  • 500g rice vermicelli noodles
  • 400ml coconut milk
  • 300g prawns, peeled and deveined
  • 200g chicken breast, sliced
  • 1 tablespoon laksa paste
  • 2 cups chicken stock
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 cup bean sprouts
  • 4 hard-boiled eggs, halved
  • Fresh cilantro, chopped

Instructions

  1. Soak the rice vermicelli noodles in hot water according to package instructions, then drain and set aside.
  2. In a large pot, heat the laksa paste for 1-2 minutes, then add the coconut milk and chicken stock. Bring to a simmer.
  3. Add the prawns and chicken to the pot and cook until they are just done, about 5 minutes.
  4. Stir in the fish sauce and brown sugar, then add the bean sprouts and cook for another 2 minutes.
  5. To serve, divide the noodles among serving bowls and ladle the laksa broth over the top. Top with hard-boiled eggs and cilantro.
