Laksa Love Affair
Laksa is a popular spicy noodle soup from the Peranakan culture, which is a mix of Chinese and Malay cuisines. This Laksa Love Affair recipe will take you on a flavorful journey through the vibrant and aromatic flavors of Malay cuisine.
Ingredients
- 500g rice vermicelli noodles
- 400ml coconut milk
- 300g prawns, peeled and deveined
- 200g chicken breast, sliced
- 1 tablespoon laksa paste
- 2 cups chicken stock
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 cup bean sprouts
- 4 hard-boiled eggs, halved
- Fresh cilantro, chopped
Instructions
- Soak the rice vermicelli noodles in hot water according to package instructions, then drain and set aside.
- In a large pot, heat the laksa paste for 1-2 minutes, then add the coconut milk and chicken stock. Bring to a simmer.
- Add the prawns and chicken to the pot and cook until they are just done, about 5 minutes.
- Stir in the fish sauce and brown sugar, then add the bean sprouts and cook for another 2 minutes.
- To serve, divide the noodles among serving bowls and ladle the laksa broth over the top. Top with hard-boiled eggs and cilantro.
