Lamb and Chickpea Stew (Qorma-e-Chana)

Ingredients

  • 1 lb lamb, cut into chunks
  • 1 cup dried chickpeas, soaked overnight
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 green chilies, slit
  • 1/2 cup plain yogurt
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add the chopped onions and cook until golden brown.
  2. Add the lamb chunks and cook until browned on all sides.
  3. Stir in the garlic, ginger, and green chilies. Cook for a few minutes until fragrant.
  4. Add the diced tomatoes, yogurt, and spices. Mix well and cook for 5 minutes.
  5. Drain the soaked chickpeas and add them to the pot. Pour in enough water to cover the ingredients.
  6. Cover the pot and let the stew simmer for 1 hour, or until the lamb and chickpeas are tender.
  7. Season with salt to taste and garnish with fresh cilantro before serving.
