Lamb and Chickpea Stew (Qorma-e-Chana)
Qorma-e-Chana is a traditional Afghan stew made with tender lamb and hearty chickpeas, simmered in a flavorful blend of spices and aromatics. This comforting dish is perfect for a cozy family meal or a special gathering.
Ingredients
- 1 lb lamb, cut into chunks
- 1 cup dried chickpeas, soaked overnight
- 2 onions, finely chopped
- 3 tomatoes, diced
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2 green chilies, slit
- 1/2 cup plain yogurt
- 2 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- 2 tbsp vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a large pot over medium heat. Add the chopped onions and cook until golden brown.
- Add the lamb chunks and cook until browned on all sides.
- Stir in the garlic, ginger, and green chilies. Cook for a few minutes until fragrant.
- Add the diced tomatoes, yogurt, and spices. Mix well and cook for 5 minutes.
- Drain the soaked chickpeas and add them to the pot. Pour in enough water to cover the ingredients.
- Cover the pot and let the stew simmer for 1 hour, or until the lamb and chickpeas are tender.
- Season with salt to taste and garnish with fresh cilantro before serving.
