Lamb and Potato Curry (Qorma-e-Aloo)

Ingredients

  • 1 lb lamb, cut into cubes
  • 2 large potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1/2 cup plain yogurt
  • 2 tomatoes, chopped
  • 2 cups chicken or beef broth
  • 2 tbsp vegetable oil
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic, grated ginger, and spices (turmeric, coriander, cumin, cayenne pepper) to the pot. Stir and cook for 1-2 minutes until fragrant.
  3. Add the cubed lamb to the pot and brown on all sides.
  4. Stir in the chopped tomatoes and cook for a few minutes until they begin to break down.
  5. Pour in the chicken or beef broth and bring the mixture to a simmer. Cover and cook for 45 minutes, or until the lamb is tender.
  6. Add the cubed potatoes to the pot and cook for an additional 15-20 minutes, or until the potatoes are soft and the sauce has thickened.
  7. Stir in the plain yogurt and season with salt to taste. Cook for a few more minutes to heat through.
  8. Garnish with fresh cilantro before serving.
