Lamb and Potato Stew (Qorma-e-Dum)
Qorma-e-Dum is a traditional Afghan stew made with tender lamb, potatoes, and a flavorful blend of spices. This hearty and comforting dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 1/2 lbs lamb, cut into chunks
- 2 large potatoes, peeled and cubed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1/2 cup plain yogurt
- 2 tomatoes, chopped
- 2 cups water
- 2 tbsp vegetable oil
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp ground cinnamon
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions and cook until softened.
- Add the lamb chunks to the pot and brown on all sides.
- Stir in the garlic, ginger, and spices. Cook for a few minutes until fragrant.
- Add the chopped tomatoes and cook until they start to break down.
- Whisk the yogurt with a bit of water and pour it into the pot, stirring constantly.
- Add the cubed potatoes and water. Season with salt and pepper.
- Cover the pot and let the stew simmer for about 1 hour, or until the lamb is tender and the potatoes are cooked through.
- Adjust the seasoning if needed and serve hot.
