Lamb and Potato Stew (Qorma-e-Dum)

Ingredients

  • 1 1/2 lbs lamb, cut into chunks
  • 2 large potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1/2 cup plain yogurt
  • 2 tomatoes, chopped
  • 2 cups water
  • 2 tbsp vegetable oil
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions and cook until softened.
  2. Add the lamb chunks to the pot and brown on all sides.
  3. Stir in the garlic, ginger, and spices. Cook for a few minutes until fragrant.
  4. Add the chopped tomatoes and cook until they start to break down.
  5. Whisk the yogurt with a bit of water and pour it into the pot, stirring constantly.
  6. Add the cubed potatoes and water. Season with salt and pepper.
  7. Cover the pot and let the stew simmer for about 1 hour, or until the lamb is tender and the potatoes are cooked through.
  8. Adjust the seasoning if needed and serve hot.
