Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 red bell peppers, diced
  • 4 tomatoes, chopped
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 1/2 cup fresh cilantro, chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the lamb and brown on all sides. Remove the lamb from the pot and set aside.
  2. In the same pot, sauté the onion and garlic until softened.
  3. Add the bell peppers, tomatoes, paprika, cayenne pepper, salt, and pepper. Stir to combine.
  4. Return the browned lamb to the pot and add enough water to cover the ingredients.
  5. Cover the pot and simmer for 1.5 to 2 hours, or until the lamb is tender.
  6. Stir in the chopped cilantro before serving.
