Ingredients
- 2 lbs lamb, cut into chunks
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 2 red bell peppers, diced
- 4 tomatoes, chopped
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 1/2 cup fresh cilantro, chopped
Instructions
- Heat the olive oil in a large pot over medium heat. Add the lamb and brown on all sides. Remove the lamb from the pot and set aside.
- In the same pot, sauté the onion and garlic until softened.
- Add the bell peppers, tomatoes, paprika, cayenne pepper, salt, and pepper. Stir to combine.
- Return the browned lamb to the pot and add enough water to cover the ingredients.
- Cover the pot and simmer for 1.5 to 2 hours, or until the lamb is tender.
- Stir in the chopped cilantro before serving.
