Lamb Curry (faikakai Sipi)
Lamb Curry, known as Faikakai sipi in Tongan cuisine, is a flavorful and aromatic dish that is perfect for a hearty meal. This traditional Tongan recipe combines tender lamb with a rich and fragrant curry sauce, creating a dish that is both comforting and satisfying.
Ingredients
- 1.5 lbs (680g) lamb, cut into cubes
- 2 tablespoons curry powder
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 can (14 oz) coconut milk
- 2 tomatoes, diced
- 2 potatoes, peeled and cubed
- 2 cups (480ml) chicken or vegetable broth
- Salt and pepper to taste
- 2 tablespoons cooking oil
Instructions
- Heat the cooking oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the lamb cubes to the pot and cook until browned on all sides.
- Sprinkle the curry powder over the lamb and stir to coat the meat evenly.
- Pour in the coconut milk and chicken or vegetable broth. Add the diced tomatoes and cubed potatoes. Season with salt and pepper.
- Bring the curry to a simmer, then reduce the heat to low. Cover the pot and let the curry simmer for about 1 hour, or until the lamb is tender and the sauce has thickened.
- Serve the lamb curry hot with steamed rice or roti.
