Ingredients

  • 1.5 lbs lamb, cut into cubes
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 tomatoes, chopped
  • 1/2 cup plain yogurt
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 cinnamon stick
  • 4 cardamom pods
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne pepper
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the cumin seeds, cinnamon stick, and cardamom pods. Cook until fragrant, about 1 minute.
  2. Add the onions, garlic, and ginger. Cook until the onions are soft and translucent.
  3. Add the lamb cubes and cook until browned on all sides.
  4. Stir in the ground coriander, ground cumin, turmeric, and cayenne pepper. Cook for 2 minutes.
  5. Add the chopped tomatoes and cook until they break down and form a thick sauce.
  6. Stir in the plain yogurt and season with salt. Cover and simmer for 45-60 minutes, or until the lamb is tender.
  7. Garnish with fresh cilantro and serve hot with rice or naan.
