Ingredients

  • 1.5 lbs (700g) lamb, cut into cubes
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 1 can (14 oz/400ml) coconut milk
  • 2 tbsp vegetable oil
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  2. Add the lamb cubes to the pot and brown them on all sides.
  3. Stir in the ground coriander, cumin, turmeric, paprika, and cayenne pepper. Cook for 1-2 minutes to toast the spices.
  4. Add the chopped tomatoes and coconut milk to the pot. Season with salt and pepper, then bring the curry to a simmer.
  5. Cover the pot and let the curry simmer for 1 hour, or until the lamb is tender.
  6. Garnish with fresh cilantro before serving.
