Ingredients
- 1.5 lbs (700g) lamb, cut into cubes
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 1 can (14 oz/400ml) coconut milk
- 2 tbsp vegetable oil
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the lamb cubes to the pot and brown them on all sides.
- Stir in the ground coriander, cumin, turmeric, paprika, and cayenne pepper. Cook for 1-2 minutes to toast the spices.
- Add the chopped tomatoes and coconut milk to the pot. Season with salt and pepper, then bring the curry to a simmer.
- Cover the pot and let the curry simmer for 1 hour, or until the lamb is tender.
- Garnish with fresh cilantro before serving.
